The wine program at Everest is inspired by our philosophy that the selection and interplay between food and wine are an integral part of a dining experience. We have chosen to showcase the wines of Alsace as the cornerstone of our list because of Chef Joho’s Alsace heritage and his personal belief that in no other region of France are food and wine so tightly intertwined as in Alsace. With over three hundred and fifty selections, the Everest wine list has received international acclaim for having one of the greatest offerings of Alsace wines in the world.
We have taken a great effort to represent all of the significant wine appellations within our selection of 1,600 wines. Please note our extensive selection of wines from the classic French regions of Bordeaux, Rhone Valley and Burgundy and the wide array of American wines from California, Oregon and Washington State. If something different is what you seek, perhaps we can tempt you with one of our offerings from Spain, Australia, Italy or Argentina. Everest treats its wines with the utmost care. We store all of our wines in a temperature and humidity-controlled cellar and serve them in appropriate crystal stemware.
